There was no dismemberment in GTA V outside of cutscenes. In the PS2 games, there was dismemberment but it was much more goofy looking. Someone will then start a rumour out of nowhere that Rockstar devs are forced by management to look at actual snuff films as reference so they can make the gore more realistic, and some weirdos will feel ecstatic that they have a moral justification for why they personally aren't interested in GTA games and use it to attack the character of people who do enjoy them.
