    There are a few tricks with home bread baking that make the difference between a lackluster loaf and a spectacular one. One of them is having a heavy duty baking surface to get a nice bottom crust, and another is creating a steamy environment for a lofty loaf. Managing these requirements might sound like a challenge, or like expensive equipment might be involved, but you can actually solve both needs with a common piece of cookware: the Dutch oven.Why you should bake bread in a Dutch ovenA heavy duty baking surface, like a baking stone, is easy enough to come by, but a steam injected oven like the bakeries have is not as common at home. Steam is essential for a fully risen loaf of bread that cracks open exactly where you score it. The moist air allows for oven spring and its the last time your bread rises after all that proofing. Without moisture, the bread will immediately develop a dry skin that impedes the oven spring. This can stunt your loaf and also cause it to tear open at an unintended seam as the inside of the bread starts rising a few minutes later. Moist air in the first five to 10 minutes of baking ensures the crust doesnt develop too early and the dough can expand as much as possible.Theres the ol pan of water trick, where you add water to a hot pan in the oven in hopes that itll steam things up while your bread bakes, but I find that this isnt always enough because the oven is such a large space and the steam vents out quickly. If only you had a small, enclosed space made from a heavy duty material to capture the breads natural moisture and evenly distribute the heat. Oh. Right. The Dutch oven is like a baking stone and a steam keeper all rolled into one. (And if you don't have one yet, here are some affordable options.) The Dutch oven makes a huge difference in the rise my sourdough gets compared to the baking stone and water pan method.How to make bread in a Dutch ovenYou can make any yeast-raised bread in a Dutch oven (and a ton of other stuff too), just make sure the loaf isnt too big for the pot that you have. A round loaf of bread thats fully proofed and ready to bake should have an inch of clearance all the way around and a few inches above. A lot of rise is what were counting on, so you dont want the space to be cramped.When your bread dough has already done the bulk proof, and its been shaped, place it on a large piece of parchment paper for its second proof. Then get to setting up your oven. Credit: Allie Chanthorn Reinmann My dutch oven is rather tall so I put the rack down to the second-to-bottom position so I have enough space. About 30 minutes before your bread is finished proofing, put a lid on your Dutch oven and put it in the oven to preheat. Set the oven to whatever temperature you need. Ill set mine to 450F for the sourdough. Keep in mind that most Dutch ovens are oven safe up to 500F or higher, but sometimes the handle on the lid isnt. Check your brand to make sure. If your lid isnt oven safe, use a baking sheet to cover the top. Its not perfect but itll do. Credit: Allie Chanthorn Reinmann Once the bread is ready to be baked, score the bread how youd like. I'm partial to the square score. Carefully take the Dutch oven out of the oven with mitts on. Remove the lid. Lift the bread up by the parchment paper corners and lower it into the pot. Put the lid on (if youre using a baking sheet lid, put it on once the pot is in the oven) and put the entire Dutch oven back into the conventional oven. Bake it for as long as your recipe indicates, but with 10 minutes left in the baking time, remove the lid so the bread can brown. Take the bread out of the pot carefully to cool on a wire rack.My Dutch oven sourdough recipeThis recipe uses a sourdough starter for flavor and the leavening, of course. However, if youre not in the business of keeping starter around (and if you want to but it keeps failing, read this) then you can just stir one teaspoon of active dry yeast into the water measurement before adding the flour and salt.Ingredients:7 ounces room temperature water4 ounces sourdough starter10 ounces high-gluten flour0.25 ounces salt1. Mix the water, starter, and flour together in the bowl of a stand mixer. I use the dough hook and stir things around until the dry bits have been moistened and the dough looks shaggy. Let this rest for 15 minutes. This short autolyse will help hydrate the flour and strengthen the gluten.2. Set the dough hook and bowl onto the machine and start it on the first speed. Sprinkle in the salt as its stirring. Put the machine onto the second speed for three minutes, and the third speed for another three minutes. The dough may stick a bit to the bottom at first and thats alrightitll gather up by the end. Credit: Allie Chanthorn Reinmann 3. Place the dough into a lightly oiled bowl and cover it with plastic wrap, a plastic bag, or a hotel shower cap. Place this bowl in a warm area, or my favorite mug warmer proofing rig. Every 45 minutes, fold the dough in half and flip it over. This is especially helpful for sourdough, but if youve used active dry yeast you can leave it be.4. Once the dough has doubled in size, usually two to three hours depending on how active your yeast is, dump it out onto a lightly floured surface. Fold the dough in half to knock out the air. Shape the dough into a square and lift the edges together to make a purse. Dust away the flour and flip the purse over. Use your hands to tighten the doughs skin and shape a ball. Heres my video on dough shaping. (Its very helpful, according to me.)5. Set the loaf onto a large piece of parchment paper and cover it with a tea towel and drape over that same piece of plastic you used before. Let this proof for about 45 minutes, or until a fingerprint springs back halfway.6. Heat the Dutch oven in the conventional oven during this proofing time. When the bread is ready to bake, score the bread with a sharp serrated knife or a lame. Take out the pot, grab the corners of the parchment paper and lower the loaf into the pot. Cover the Dutch oven and put it into the oven to bake for 15 minutes. Remove the lid and leave the bread in the oven to finish baking for another 10 minutes. Cool the finished loaf on a wire cooling rack.

The removable battery is rechargeable via USB-C and will likely need a refill every couple months. You'll need a Ring subscription to access all the features, like person and package alerts and extended event history. Apple Apple Music (6 months) for $3 at Apple ($60 off): Normally an Apple Music subscription is $11 per month after a 30-day free trial. And when you buy a new Apple device, you usually get a three-month trial. But if you somehow haven't yet signed up for the service, this promotion applies to you. The deal will run through February 27 and is open only to people who are entirely new Apple Music current and previous customers are not eligible, nor are those who qualify for the free trial that comes with a new device. Amazon Kindle Colorsoft Signature Edition (32 GB) for $230 at Amazon ($50 off): Engadget's Valentina Palladino found a lot to like about the Kindle Colorsoft in her review including quick page turns, the fairly accurate (if a bit cold) color technology and the pinch to zoom feature, which was especially nice for reading comics. If you're just looking to read black and white text, you can save yourself a bit of money and go with the Paperwhite text on the Colorsoft is not as crisp. 8BitDo Pro 2 controller for $39 at Amazon ($12 off): The black version of one of our picks for the best Switch controllers is down to a record-low price. The fall event happens like clockwork in the weeks following the Labor Day holiday.But theres one exception to this annual product launch: the iPhone SE, Apples entry-level smartphone. The iPhone SE, which is currently on its third generation, has historically always launched in the spring, with its most recent iteration debuting in March 2022.The prevailing assumption is that the product launch Tim Cook is referring to is the launch of a new fourth-generation iPhone SE. And if thats the case, the new one that launches on Wednesday could sport the first radical redesign in the phones history.Potential iPhone SE redesignThe current iPhone SE (third-generation) has one big thing going for it: At a starting price of just $429, its the cheapest phone Apple sells.But thats about the nicest thing you can say about it. The phone has plenty of drawbacks, the most significant being it still has the form factor of the iPhone 8 from back in 2017. It has a tiny 4.7-inch display, thick bezels, Touch ID, and an archaic Lightning port (modern iPhones have USB-C). It also features an older A15 chip and just 4GB of RAMneither powerful enough to run Apple Intelligence.In other words, the phone is ripe for a redesign, which is just what we might get this Wednesday. Reports have been circulating for at least a year now what the fourth-generation iPhone SE may look like. Here are some of the features that have been rumored for the new iPhone SE:A larger 6.1-inch displayAn edge-to-edge screen with small bezels (it will essentially have the body of the iPhone 14, says Bloomberg)A18 chipset8GB of RAMFace IDUSB-CA single rear cameraWhile none of these features would be considered a radical redesign for the iPhone family at large (other iPhones possess all these features and more), they would amount to a radical redesign of the current iPhone SE. And if the new SE gains 8GB of RAM and the A18 chipset, it would be powerful enough to run Apple Intelligencea first for the device.If this new model is introduced on Wednesday, it would also represent the end of an era for the iPhone. If the new iPhone SE adds support for Face ID (which is a near certainty), then it would mark the end of Touch ID on the iPhoneApples biometric sensor that revolutionized security for the device, which was first introduced on the iPhone 5s back in 2013.Other possible Apple announcementsOf course, there is the outside possibility that Tim Cook isnt referring to the imminent launch of the new iPhone SE in his post. If thats the case, there are a few other products Apple might be launching instead.These include an upgraded Apple Vision Pro with an M5 chipset, an upgraded MacBook Air with an M4 chipset, or even upgraded AirTags. Could one of these do the same job as the two existing monitors while saving me precious desk space and offering further single-screen benefits?I tested the larger of the two new displays, the Edge 40 Ultrawide QHD Monitor, but include details of the smaller but still ultrawide 34-inch Edge.See how these Ultrawide QHD Monitor compare to other displays we have reviewed in our Best Mac monitors round up.40-inch Edge (top) and 34-inch Edge (bottom).AlogicFeaturesBoth 34-inch and 40-inch models support up to a 34401440-pixel resolution. A flat 40-inch ultrawide display is more appropriate to productivity jockeys. The ultrawide aspect ratio makes it ideal for multitasking and working comfortably with multiple windows open in one view.Standard monitors, like Alogics own 27-inch Clarity displays, have an aspect ratio of 16:9. The ultrawide Edge has an aspect ratio of 21:9, so is much longer horizontally. That extra width is perfect for keeping lots of things onscreen in the same view and not layered under each other. Normally, youd need a couple of monitors side by side to achieve this. We have also tested the Mobile Pixels Geminos Dual Vertical FHD Monitor, which unusually stacks two screens vertically.Ultrawide monitors have slightly lower resolutions than more standard monitors, which is worth bearing in mind if you are a professional digital creative. My graphic-designer wife was impressed with the Edges color gamut (the range of colors it can generate), but less so with the crispness of the text.As a result of the 40-inch screen size combined with the 3,4401,440 resolution, pixel density is lower than youll find on smaller displays. The 40-inch Edge supports 93 pixels per inch (ppi), compared to the shaper 110ppi for the 34-inch Edge. In comparison, the 27-inch Clarity screen is the crispest of all the Alogic displays at 163ppi. The Edge pixel density is greater than an HD screen (82ppi) but nowhere near as cystal as a 5K display such as the 218ppi Apple Studio Display.A close rival to the 40-inch Edge is the Monoprice 44394 40-inch Crystal Pro that offers the same resolution and pixel density. We much prefer the Edges more flexible and better-looking stand, but gamers will fancy the Monoprices screens superior 144Hz refresh rate. While many ultrawide monitors are used by gamers, the refresh rates on offer with the Edge monitors (6-Hz or 100Hz) are too low for that crowd. With up to an 100Hz option, the refresh rates are higher than the 60Hz supported by most 4K displays and is all you need for web browsing and other productivity tasks.For general productivity tasks I didnt find this lower pixel density a problem for my eyes at least. Even a spreadsheet full of large numbers in tiny cells was clearly legible. This lack of crispness is, however, noticeable on very small text.Simon Jary / FoundryAnd, boy, does an ultrawide screen favor the longest Excel sheetsyou can keep so much data in view without endless scrolling back and forth. The 40-inch width allowed me to fit almost four A4-wide Word docs side by side.AlogicHub and connectionsThat ultrawide resolution matches the working comfort that I get from my two 27-inch displays, but I need only one connection from my Mac mini to the single monitors hub.The hub port configuration is updated compared to the Clarity monitor hub, dropping one HDMI port plus two USB-A ports for more USB-C and Gigabit Ethernet.Hub specs1x USB-C to Host Connection with 90W Charging and Data1x HDMI 2.0 port1x DisplayPort 1.4 port2x USB-C ports (USB 2.0, 5W Charging)1x 3.5mm Audio Output1x Gigabit Ethernet portThe two USB-C ports are primarily for charging purposes as the data-transfer speed is USB 2.0s measly 480Mbps rather than the USB-C to host connections 5Gbps speed. They will be fine for connecting a wired keyboard and mouse or giving power to low-input devices. The 5Gbps USB-C connection to host is underpowered compared to the Macs own 40Gbps Thunderbolt 4 so if you need multiple fast ports you should invest in a premium dock or more affordable hub. See Macworlds recommended best Mac docking stations and best Mac USB-C hubs.Importantly, the Edges hub is powerful enough for the most important video connection, and you can choose between USB-C, HDMI or DisplayPort.Edge doesnt require the extra bandwidth DisplayPort can offer over HDMI, so users can connect with either cable knowing theyre getting the full visual experience. Both options are included to make connection simple regardless of what input devices users have.Using USB-C means you can power your laptop by up to 90W, which is enough for most MacBooks, and take advantage of the ports in the hub at the back of the Edge display, such as the wired Gigabit Ethernet connection.The Edge includes built-in 3W speakers that are fine for video/voice calls but not what youd enjoy using to listen to music or a movie. Theres a 3.5mm audio port that can be used to attach wired headphones or speakers, but not an audio-in microphone.Left: the Silver 40-inch Edge. It weighs 11.6kg (25.6lbs) with stand.The smaller 34-inch Edge measures up to 64.1cm (25.2in) tall, 81.4cm (32in) wide and 24.5cm (9.6in) deep. It weighs 10.1kg (22.3lbs) with stand.Like its Clarity monitor siblings the Alogic Edge displays look fantastic, and in keeping with an Apple aestheticalthough at a far more affordable price than Apples Studio Displays. It is available in either Silver or Space Gray to match your Mac. The Edges frame is fine at just 8mm thick, or should that be 8mm thin?The back of the screens tempered glass looks great, too, if its not facing a wall.Setup is simple. The machined aluminum stand design is a two-piece that you can quickly put together with a single thumb screw connecting the stem and base, which then clicks into the rear of the display. The stand is heavy and offers sturdy support for the display, with less wobble than youll find with lighter monitor stands.As you might expect, width is something you should consider before purchasing an ultrawide display. The 40-inch screen is almost a meter wide (94.1cm), so check it will fit your work space. If you are replacing two 27-inch monitors, even the larger screen will free up desk space while still allowing multiple docs open in the same view.The stand is just under a foot deep as well, so youll need some space for sure. The base is about as wide as a full-size Apple keyboard. Its one of the best stands weve tested, offering both tilt and height adjustment: 10 degrees Up/Down, and 45 degrees Left/Right.One ultrawide monitor vs two monitorsA typical two-monitor setup. FoundryIf you want to boost your screen productivity both ultrawide and dual-monitor setups are viable options, each with their own advantages.Two side-by-side monitors provide a natural separation if you are managing multiple applications. The pixel density on each of the separate displays is also likely to be better than with one ultrawide screen.However, with one ultrawide screen there is less of an issue with matching specs, meaning you avoid potential color, brightness, and display quality discrepancies if the two monitors have different specifications. This simplifies the management of display settings compared to a dual monitor setup.Theres also no bezel gap between the two monitors, and less cable clutter with just one connection between the computer and screen.Ultrawide monitors also offer the advantage of viewing movies in full size without letterboxing.The Alogic Illuminate Light Bar is a $149 accessory offering adjustable lights and webcam.AlogicLights, webcam, actionThe Edge monitors dont ship with a built-in webcaminstead Alogic encourages interested customers to pair the monitor with its $149.99 / 119.99 Illuminate USB-C Light Bar that includes a 12-megapixel 4K autofocus webcam.This lightbar sits on top of the display and is powered via USB-Cmost conveniently to one of the spare USB-C slots in the monitors hub if you are connected to the computer by USB-C.The Illuminate Light Bars adjustable LEDs and the clever touch-sensitive wireless remote-control dial let you control of your workspace with warm or neutral lighting, including brightness and color temperature. On the lightbar itself you can dim or turn the lights on and off, and adjust color temperature. Because the Edge monitor doesnt drop on its stand as low as the companys Clarity monitor does, this leaves a lot of space above your head in the webcams frame of view. Alogic explained to me that the stand cant go as low as Claritys due to the internal mechanics.
